Hi Guys! Welcome to the “What I Ate Wednesday” Blog! In case you don’t know what that is it’s when I keep track of everything I ate on a previous day! My daily food intake isn’t really all that exciting but it’s fun to see what other people eat even if it’s rather plain and ordinary! BREAKFAST:

QUAKER OATS CINNAMON & SPICE OATMEAL: I have been loving this since it’s so cold out and I have my usual coffee and a glass of milk to go with it.

 

LUNCH:

FISH FILLET: This was from McDonald’s. I got just the sandwich with an unsweetened iced tea with lemon.

 

DINNER:

BROTH BOWL: I talk about this a lot on twitter. It’s from Panera and here’s the description of it from their website; Organic quinoa and organic brown rice, lentil blend, tomato sofrito, fresh kale and spinach in our umami soy-miso broth topped with a hard-boiled cage-free egg and lemon wheel. This is not only super healthy but it’s soooooo good!! It’s very filling so this is all I get and that day I got a frozen caramel for my drink.

 

SNACKS/DESSERTS:

CHEESE & CASHEWS: I have been getting into the Sargento cheese & nut snack bowls. They are fairly new I think and the one I get has cheddar cheese, cashews and cherry juice infused cranberries! Eating healthier snacks can be tasty!

THIS IS WHAT I ATE ON MONDAY!

BREAKFAST:

CHEERIOS: Cheerios! Then as always my illy coffee!

LUNCH:

STEEL CUT OATS: This was from Panera and its a powerhouse oatmeal with strawberries, cinnamon and pecans! It’s low fat and fills you up!

DINNER:

IHOP: Those of you not in the USA IHOP is a very well known pancake/breakfast place but they do serve lunch and dinner as well but you can order breakfast day or night! I got the spinach & mushroom omelette with pancakes topped with vanilla cream, bananas and walnuts. It was so good and I love having breakfast for dinner once in a while. As you can see I already ate some because I keep forgetting to take pics for my blog! Lol. So sorry its half eaten but that just shows how good it was! ;)

SNACKS/DESSERTS:

BAKED CHIPS: I didn’t really have snacks yesterday but chips are technically a snack and that I did have a few of. They’re from Panera and I didn’t even know they did baked chips but they are pretty good!

CHEERIOS: Good old cheerios! I think my cheerios was grumpy that morning tho! Lol Then as always my illy coffee!

MAC-N-CHEESE: These are so good, quick and from Stouffers! They taste just like the ones you put in the oven.

DINNER:

CHICKEN: I made the chicken with smokehouse maple seasoning and the corn is fried with peppers and honey! Don’t mind the paper plate since I had just did dishes and didn’t feel like getting them dirty again!

REESES PEANUT BUTTER CUPS: I couldn’t resist these when I went grocery shopping yesterday! These are the little mini ones. Mmm…… need I say more? ;)

TODAY IS WHAT I ATE WEDNESDAY RECIPE EDITION!

KALE SOUP with Kielbasa and Beans

prep time: 10 mins
Cook Time: 50 mins

Ingredients Serves 6

2 teaspoons olive oil
6 ounces smoked turkey kielbasa, chopped (if you can find it smoked if not regular is fine)
1 large onion, chopped
1 rib of celery, chopped
1 garlic clove, minced
6 cups chicken broth
2 cups water
8 ounces kale, thick stems removed and leaves sliced, or 2 packages (10 ounces each) frozen kale, thawed and squeezed dry
12 ounces red potatoes, cut into 1/2-inch pieces with skin
1/2 teaspoon smoked paprika (if you can find smoked if not regular is fine)
1/2 teaspoon hot red pepper sauce (optional)
1/4 teaspoon salt
1 1/2 cups cooked or canned small white beans or cannellini beans, rinsed and drained

Directions

Step 1.

Heat oil in a large soup pot over medium heat. Add kielbasa and cook until browned all over, about 5 minutes. Remove to a bowl.

Step 2.

Add onion and celery to the pot and cook until soft, 5 to 6 minutes. Add garlic and cook 1 minute. Return kielbasa to the pot and add broth, water, and kale. Bring to a boil over high heat and then reduce heat to medium-low. Cover and simmer until kale begins to wilt, about 10 minutes.

Step 3.

Stir in potatoes, paprika, red pepper sauce, and salt. Simmer, covered, until potatoes and kale are tender, about 20 minutes. Add beans and cook just until heated through, about 5 minutes.

Tip: Look for smoked paprika in the gourmet spice section of your grocery store.

ORGANIC OATS & HONEY GRANOLA CEREAL: This is from a company called Cascadian Farms and I found this at BJ’s. It’s very good but very sweet. It’s also pretty filling so you only need a very small amount. Then as always my illy coffee!

LUNCH:

BACON, EGG & CHEESE MCGRIDDLE: It’s no surprise by now that I like McD! Lol. This sandwich is pretty good and the top of it is like a pancake with built in syrup! I had an orange juice to go with it.

DINNER:

PANERA: I usually don’t get take-out during the week but I did yesterday. (today I am cooking and I’m making pork chops) I got the You Pick 2 deal with a broccoli cheddar soup and a tomato mozzarella flatbread!

SNACKS/DESSERTS:

FROZEN CARAMEL: I didn’t have any junk food at all yesterday or snacks but to me I sort of consider the frozen caramel on the “junkie” list even tho I’m sure it’s not that bad. It’s a slushy coffee drink with whip cream and drizzled caramel on top! I usually get it every time I go to Panera’s. I’m sure most if you knew that already! ;)
